I LOVE pico de gallo and freshly made. I get all my ingredients at the farmers market or my local CCA. Here's my simple recipe and you can easily adjust depending on how much you want to make.
* 1 lb tomatoes (3-4 medium), diced
*1/2 medium onion (red or yellow)
(1 cup chopped)
*1 jalapeno pepper seeded and finely minced (optional)
*1/2 cup cilantro chopped
2 Tbsp lime juice from 1 lime
1/2 tsp salt or to taste
1/8 tsp black pepper - want to really add a kick - use a little cayenne pepper
Serve with tortilla chips or tostones. YUMMY!!
